Responsible for the creation and production of all baked goods and desserts (breakfast, lunch, dinner and any other amenities) in any of Blackberry Mountain’s Restaurants.
ESSENTIAL DUTIES AND RESPONSIBILITIES
Cleanliness and organization of bakeshop
Communication and ordering of all pastry specific supplies and equipment
Proper rotation and monitoring of raw and finished products
Overseeing all production of breakfast pastries, breads, lunch and dinner desserts
Management of production schedule
Management of staff work schedule
Full creative responsibility in menu development under guidance from Executive Chef
Represent Blackberry Mountain in cooking schools, public events and media situations
Coordination with Executive Chef of daily needs of restaurant operation, especially pertaining to bakeshop
Training of all pastry team members and other kitchen staff where necessary
Overseeing pastry employee tier systems and reviews
Maintaining current seasonal dessert rotation
Recipe costing
Must comply with all company policies and procedures.
To perform the essential functions of this position regular and consistent attendance in required.
Must be able to work well with other Team Members, Managers and interact with our guests.
SUPERVISORY RESPONSIBILITIES
Oversees up to 10 pastry cooks, one pastry supervisory and Head Bread Baker
This position is considered a member of the kitchen leadership team and a member of the property’s management team
EDUCATION and/or EXPERIENCE
5 Years’ experience in Restaurant and Pastry or Culinary Education and a minimum of 3 years’ experience in Restaurant and Pastry
High school diploma or equivalent
LANGUAGE SKILLS
Must be able to write and speak clearly and effectively
Must be able to compose effective recipes
Must be able to communicate effectively with guests, managers and team members
MATHEMATICAL SKILLS
Must be able to convert recipes into larger and smaller batches
Must thoroughly understand weights, measures and conversion of both
REASONING ABILITY
Must be able to exercise judgment and make decisions based on job knowledge and awareness of company goals
PHYSICALDEMANDS
Requires heavy lifting of up to 50 lbs.
Requires working entire shift standing up
Requires constant bending, stooping and reaching
Must be able to safely operate a company vehicle or golf cart
WORK ENVIRONMENT
Fully equipped bakeshop staffed by as many as six people at one time
Requires working as part of the overall kitchen team and sharing of equipment, supplies and product
